Description
Cloves are dried flower buds from the clove tree. They are small, dark brown and shaped like tiny nails, with a strong warm smell and a sweet, slightly sharp taste.
Their flavour is powerful, so a little goes a long way. They add depth to hot drinks, rice dishes, stews, sauces, cakes and sweet breads.
How it is commonly used
People commonly use cloves as a spice in tea, pilau, soups, sauces, meat, vegetable dishes, cakes and spice blends. They bring a rich aroma and a warm flavour.
Cloves are well known for supporting digestion and for making warming teas. They contain essential oils, especially eugenol, and natural antioxidants.
They are also used in oral care and for fresh breath because of their strong, clean aroma.
How to use
Use cloves sparingly because their flavour is strong. For tea, add about 3–5 whole cloves per cup, or 5–8 cloves to a small teapot, and simmer for a few minutes.
In cooking, add whole cloves to release their aroma, then remove them before serving. You can also crush or grind them for spice mixes, baking and warm drinks.
Origin
Native to the Maluku Islands in Indonesia.
Storage
Keep cloves in a cool, dry place away from sunlight. Store in a tightly closed container to keep their aroma fresh.
Warnings and important notes
Cloves are strong; using too much may irritate the mouth or stomach. Avoid very large amounts during pregnancy. Clove oil is very concentrated and is not suitable for young children.
